Founded in 1998 on the edge of Darling Harbour, Aussie Sea Delights Seafood has grown from a humble fish-and-chips kiosk to Sydney’s go-to spot for premium, responsibly sourced seafood. Over the decades we have cultivated relationships with passionate local fishermen who dock daily at Blackwattle Bay with their overnight catch, guaranteeing peak freshness on every plate.

Our award-winning Executive Chef, Liam O’Connor, blends classic Australian coastal flavours with modern culinary techniques such as sous-vide shellfish poaching and charcoal miso glazing. His philosophy is simple: celebrate the ocean in every bite while respecting the ecosystems that sustain us.
